A Spring Evening with Michel Roux at The Horse & Groom

The Horse & Groom in East Ashling hosted Michel Roux for an incredible, one-night dinner that brought together guests, producers and friends of the pub for an exceptional spring evening.

With the Sussex sun out and the garden in full bloom, guests gathered in the garden for a reception of Roebuck Estates Classic Cuvée and Botivo & Elderflower before dinner. Annoushka Ayton introduced Michel, speaking of their friendship and marking the occasion with warmth and a sense of celebration.

The menu, created by Michel and his team, reflected his classical French training and deep respect for seasonality. Dishes included Velouté de Petits Pois with chorizo pastilla, Terrine Marbrée with truffle vinaigrette, and Coquilles Saint-Jacques poêlées with leek compote and beurre blanc. The main course, Navarin d’Agneau de Printemps aux Olives, was followed by Baba aux Pommes et Calvados and pâte de fruits.

Wine pairings were thoughtfully selected, spanning Sussex sparkling from Roebuck Estates through to Crozes-Hermitage, Brunello di Montalcino and Austrian Beerenauslese.

Head Chef Luke Cockram and the Horse & Groom kitchen team worked closely with Michel’s brigade to deliver the menu with precision and care. The evening balanced refinement with informality - serious cooking ins a relaxed country setting.

Throughout the night, Michel moved from table to table, speaking with guests and sharing stories from his career. That generosity of time and attention was as memorable as the food itself, he’s even left a signature on the wall of the dining room for all to see.

Future Events

The event forms part of The Horse & Groom’s developing guest chef series, designed to bring leading figures in British gastronomy to West Sussex while reinforcing the pub’s ambition to deliver cooking of depth and substance within a welcoming village setting.
